Old Fashioned Coconut Raisin Oatmeal Cookies

It's not Christmas without cookies! Make some of these sweet treats for those you love and watch their eyes light up with joy.  Each tasty bite is thick, chewy, moist and loaded with old-time cookie flavor.


3/4 cups butter

1 large egg

1 1/4 cups brown sugar

1/3 cup milk

1 1/2 teaspoons vanilla

3 cups quick-cooking oats

1 cup all-purpose flour

1/4 teaspoon cinnamon

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup raisins

7 ounces coconut

1 cup walnuts, chopped


Grease baking sheets.  In a large mixing bowl, cream butter, egg, brown sugar, milk and vanilla until well blended.  In another bowl, combine oats, flour, cinnamon, baking soda and salt; stir into creamed mixture.  Add raisins, coconut and nuts; stir.  Drop rounded tablespoonfuls of dough 2 inches apart onto a baking sheet.  Bake at 375 degrees for 10 to 12 minutes.  Cool on baking sheet 8 minutes before removing.


Yield:  2-1/2 dozen cookies.
