Chocolate Marshmallow Ice Cream

A summer favorite that will be a sweet surprise for your family and friends during your Christmas celebrations.  This homemade ice cream is a dream come true for chocolate lovers and sweet tooth junkies alike.  Just find a comfortable chair or a quiet spot to relax, put your feet up and indulge yourself with this smooth, creamy treat.


2 cups sugar

4 1/2 teaspoons cornstarch

1/4 teaspoon salt

4 cups milk

4 ounces unsweetened chocolate, melted

4 large eggs, beaten

4 cups light cream

1 cup marshmallow crème

opt: pecan or walnut dessert topping


In a 3 quart saucepan, combine sugar, cornstarch and salt; gradually add milk.  Cook over medium heat, stirring constantly, until thickened - about 2 minutes.  Remove from heat and stir in the melted chocolate.  Blend a small amount of the hot mixture into beaten eggs; return all to pan.  Cook 1 minute on medium heat; do not boil.  Remove from heat and cool.  Add cream; chill thoroughly.  Churn freeze until the mixture thickens; fold in marshmallow crème at last moment before freezing.


Yield:  3 quarts.


Serving Suggestion:

Scoop ice cream into tall dessert glasses.  Pour a spoonful of pecan or walnut dessert topping over ice cream and serve.
